After driving the vehicle under normal highway conditions, cruising around 60mph, the temperature gauge shot up to red and the car put itself in fail-safe mode. I was able to limp it back home thankfully. I checked the coolant level, and it was a little low, but nothing major, and there were no signs of a coolant leak. I topped off the coolant and the problem seemed to go away for a couple of weeks, but then it happened again. Checked the coolant level again and it was full. The problem happens seemingly at random every couple of weeks. I've taken it to multiple mechanics and a dealership who can't seem to replicate the issue, so I'm trading this thing in.

Update from Oct 17, 2022: A friend of mine who is a mechanic took a look at it, and said my cooling fans were not coming on. I took it to a mechanic shop he recommended, and they told me the cooling fan control module was bad, and needed to be replaced. I had them replace it, and it has completely fixed the issue.
